Healthy & Delicious Lunch Recipes For Work
I’m a big fan of bringing my lunch to work because I know exactly what I’m eating, it’s cost-effective, and I get to pretend I’m the next Jamie Oliver and that my cooking skills are amazing (they’re not).
But whenever I look for lunch recipes to get inspiration, I find articles with a massive list of recipes that look like someone found any old thing on Pinterest and pasted it onto the page. Plus, they’re always so complicated, and I don’t have the time to caramelize an onion or sear a swordfish.
I’ve decided to share some recipes that are tried and tested by yours truly so you don’t have to spend any more time thinking about what to make for lunch tomorrow. They’re all healthy, easy to make, and taste delish. Believe me, I’m no master of the kitchen, so if I can make these taste good, you can too.
Why it’s great: There are so many different combinations you can come up with, so it’s like your own version of the Whole Foods salad bar. Hummus for days. Recipe here.
Crunch Cashew Thai Quinoa Salad w/ Ginger Peanut Dressing
Why it’s great: Ginger peanut sauce = YUM. This is super quick to make if you buy pre-shredded carrots and cabbage. Just don’t put a whole onion in like it suggests because your breath will reek for the rest of the day. Recipe here or alternative with rice here.
Coconut Rice & Sweet Veggies
Why it’s great: This requires very few ingredients, and coconut rice is both tasty and filling. You could heat this up, but you really don’t have to. Recipe here.
Why it’s great: Because parsley and olives. That’s all. Recipe here.
Fuji Apple Kale Salad
Why it’s great: This is one of my favorite recipes ever, except I usually make it with pecans and balsamic vinegar. Even my boyfriend who hates healthy things likes it. Recipe here.
Fresh Vegetable Rolls
Why they’re great: Spring roll wrappers may seem tricky, but you just soak them in water for a minute until they become soft and then you can roll all of your goodies up. I like using the teriyaki-marinated tofu from Trader Joe’s. Recipe here.
Mango, Avocado & Pomegranate Salad
Why they’re great: Mango and pomegranate are two of my favorite fruits, so this recipe just gets me. Plus, any dressing that involves avocado is guaranteed to be heavenly. Recipe here.
Why it’s great: I used to hate olives with a passion, but now I looove them. All you have to do is cut up your ingredients and throw them together. Bam, done. Recipe here.
The Ultimate Sandwich
